Peanut Butter Cup Cookies

Ingredients

  • 1/2 cup salted butter softened
  • 1/3 cup sugar
  • 1/3 cup brown sugar
  • 1 large egg
  • 2 tablespoons milk
  • 1 teaspoon vanilla extract
  • 3/4 cup peanut butter crunchy or creamy
  • 1 1/2 cups all purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon kosher salt
  • 1/3 cup sugar for rolling
  • 28 Reese's Mini Peanut Butter Cups

Instructions

  • Preheat oven to 375°.
  • Add butter and sugars to a mixing bowl, mix for 2 minutes.
  • Beat in egg, milk and vanilla.
  • Next, mix in peanut butter.
  • Add flour, baking soda and salt, mixing until well combined.
  • Use a medium cookie scoop,. Place 1./3 cup sugar into a bowl. Roll cookie dough in sugar and place onto a lined or greased baking sheet about 2 inches apart.
  • Bake for 8 - 10 minutes or until lightly browned.
  • Remove from oven and top each cookie with an unwrapped mini peanut butter cup.
  • Rest on the baking sheet for 2 minutes.
  • Move to a cooling rack to cool completely.

Notes

Store cooled cookies in an airtight container at room temperature up to 5 days.
Freeze in a single layer in an airtight container up to 3 monhts.
