- 1/2 cup salted butter softened
- 1/3 cup sugar
- 1/3 cup brown sugar
- 1 large egg
- 2 tablespoons milk
- 1 teaspoon vanilla extract
- 3/4 cup peanut butter crunchy or creamy
- 1 1/2 cups all purpose flour
- 1 teaspoon baking soda
- 1/2 teaspoon kosher salt
- 1/3 cup sugar for rolling
- 28 Reese's Mini Peanut Butter Cups
Preheat oven to 375°.
Add butter and sugars to a mixing bowl, mix for 2 minutes.
Beat in egg, milk and vanilla.
Next, mix in peanut butter.
Add flour, baking soda and salt, mixing until well combined.
Use a medium cookie scoop,. Place 1./3 cup sugar into a bowl. Roll cookie dough in sugar and place onto a lined or greased baking sheet about 2 inches apart.
Bake for 8 - 10 minutes or until lightly browned.
Remove from oven and top each cookie with an unwrapped mini peanut butter cup.
Rest on the baking sheet for 2 minutes.
Move to a cooling rack to cool completely.
Store cooled cookies in an airtight container at room temperature up to 5 days.
Freeze in a single layer in an airtight container up to 3 monhts.
