Turkey Pinwheels

Turkey Pinwheels filled with smoked turkey, cream cheese, pesto, cheese and sun-dried tomatoes makes a flavorful bite-sized appetizer.

Ingredients

  • 8 ounces cream cheese softened
  • 1/2 cup pesto
  • 1/2 teaspoon kosher salt
  • 2 ounces sun dried tomatoes diced
  • 5 burrito size flour tortillas
  • 1 1/4 cups shredded mozzarella cheese
  • 12 ounces thin sliced smoked turkey

Instructions

  • Mix softened cream cheese with pesto and salt using an electric mixer or wooden spoon.
  • Spread onto flour tortillas. Top with sun-dried tomatoes and sprinkle with mozzarella cheese. Add turkey and roll up.
  • Wrap tortillas in plastic wrap and refrigerate for 2 hours or over night. Do not skip the chilling step or the filling will fall out when sliced.
  • After chilling, remove the plastic wrap and slice into desired thickness with a sharp knife on a cutting board. We did about 3/8 inch slices.
  • Place on a serving platter and serve chilled or at room temperature.

Notes

Storage: Store pinwheels wrapped in plastic wrap in the refrigerator up to 4 days.
Variations: Thin sliced chicken is also a great option in place of turkey. Use any flavor of wraps that you like, spinach wraps are tasty. Use light cream cheese if preferred.
