Turkey Pinwheels

- 8 ounces cream cheese softened
- 1/2 cup pesto
- 1/2 teaspoon kosher salt
- 2 ounces sun dried tomatoes diced
- 5 burrito size flour tortillas
- 1 1/4 cups shredded mozzarella cheese
- 12 ounces thin sliced smoked turkey
Mix softened cream cheese with pesto and salt using an electric mixer or wooden spoon.
Spread onto flour tortillas. Top with sun-dried tomatoes and sprinkle with mozzarella cheese. Add turkey and roll up.
Wrap tortillas in plastic wrap and refrigerate for 2 hours or over night. Do not skip the chilling step or the filling will fall out when sliced.
After chilling, remove the plastic wrap and slice into desired thickness with a sharp knife on a cutting board. We did about 3/8 inch slices.
Place on a serving platter and serve chilled or at room temperature.
Storage: Store pinwheels wrapped in plastic wrap in the refrigerator up to 4 days.
Variations: Thin sliced chicken is also a great option in place of turkey. Use any flavor of wraps that you like, spinach wraps are tasty. Use light cream cheese if preferred.
