Easy Spanish Rice

Easy Spanish Rice is a quick side dish to serve with your favorite tacos, enchiladas or for any Mexican inspired dinner. With just a few ingredients, this easy rice dish can be on the table in about 25 minutes.

Ingredients

  • 1 cup long grain white rice
  • 2 cups water
  • 1/2 cup picante sauce or salsa
  • 1 teaspoon granulated garlic
  • 1 teaspoon onion powder
  • 1 teaspoon ground cumin
  • 1 teaspoon kosher salt
  • juice of 1 lime

Instructions

  • Add rice, water, picante sauce, garlic, onion powder, cumin and salt to a pan. Whisk together until combined.
  • Cook over high heat until it comes to a boil. Cover and lower to simmer. Cook for 15 minutes.
  • Remove from heat.
  • Add lime juice and fluff with a fork before serving.

Notes

  • How to Make Fluffy Rice: Using a quality long grain white rice, like Ben's Original (Uncle Ben's) will yield consistent results. Use 1 part rice to 2 parts water. So for every cup of rice, use 2 cups of water. 
  • Add-Ins: Onions, bell peppers, jalapeños, black beans, pinto beans, cilantro. 
  • Storage: Store rice in an airtight container in the refrigerator up to 4 days.
  • Reheat: Place rice in a pan with a tablespoon of water and cook over medium heat, stirring often until heated through.
