Garlic Dill New Potatoes

Ingredients

  • 2 pounds new red potatoes
  • cold water
  • 1/2 cup butter
  • 3 garlic cloves minced
  • 1 tablespoon dried dill weed
  • 2 teaspoons kosher salt divided
  • 1 teaspoon fresh ground pepper
  • 1/3 cup heavy whipping cream or whole milk
  • 1 tablespoon fresh parsley optional garnish

Instructions

  • Scrub potatoes, peel if desired ( I left the skin on) and cut into 1 1/2 inch chunks.
  • Place potatoes in a large pan and cover with cold water. Cook over high heat and bring to a boil. Add 1 teaspoon kosher salt, cook until potatoes are tender, about 15 minutes.
  • Drain well in a colander.
  • Add butter and garlic to the pan and cook over low heat, stirring often about 5 minutes.
  • Add dill, salt, pepper and heavy cream, Stir to combine and continue to cook about 3 - 5 minutes.
  • Add potatoes and mix to combine.
  • Pour potatoes and sauce into a serving dish and garnish with parsley.

Notes

  • Substitutions: Whole milk or sour cream can be substituted.
  • Storage: Store in an airtight container in the refrigerator up to 4 days.
  • Reheat: Place potatoes in a pan with 2 tablespoons of milk and cook over medium heat, stirring until heated through.
