Ingredients
1cupbutter
1cuppeanut butter
1poundpowdered sugar
12ouncesmini peanut butter cups36
Instructions
Line an 8 x 8 baking dish with parchment paper or wax paper.
Unwrap peanut butter cups and cut in half.
Scatter half of the peanut butter cups over lined pan.
In a heavy sauce pan, combine butter and peanut butter over medium heat.
Bring mixture to a boil and cook 2 minutes, stirring occasionally.
Remove from heat and mix in powdered sugar until well combined.
Pour fudge over chopped peanut butter cups and smooth evenly in pan.
Sprinkle remaining peanut butter cups over top of fudge and press down into the fudge.
Smooth the top with a spatula, spreading the melted chocolate over the top.
Refrigerate at least 2 hours or overnight.
Slice into 1 inch squares.
Notes
Store fudge in an airtight container at room temperature for up to 2 weeks or refrigerate up to 4 weeks. Freeze up to 3 months.
