- 1 cup diced onion
- 1 cup diced celery
- 1 cup sliced carrots
- 1 cup diced bell pepper
- 3 tablespoons olive oil
- 8 cups turkey stock
- 1 tablespoon granulated garlic
- 1 teaspoon salt
- 1 teaspoon pepper
- Pinch chili flakes
- 12 ounces homestyle noodles homemade recipe below
- 2 cups diced smoked turkey
Add olive oil to a large soup pan and add onion, celery, carrots and bell peppers.
Season with garlic, salt, pepper and chili flakes.
Cook over medium heat, stirring often until vegetables are softened, about 8 - 10 minutes.
Add stock, Bring to a boil.
Add noodles and diced turkey, stirring to combine.
Boil for about 8 - 12 minutes, until noodles are cooked through.
Lower to simmer and cook about 10 -15 minutes or until ready to serve.
Store leftovers in an airtight container in the refrigerator up to 4 days. Freeze up to 3 months, thaw in refrigerator.
To reheat soup, add to a pan and stir in additional broth or water to thin. Cook over medium heat, stirring until warmed.
