Ranch Roasted Potatoes
Ranch Roasted Potatoes are a classic side dish that is the perfect compliment to just about any meal. Potatoes are coated in ranch dressing mix and roasted until the outsides are crispy and the insides are fluffy and delicious.

- 2 1/2 pounds potatoes red or white
- 1/3 cup vegetable oil
- 2 tablespoons dry Ranch Dressing Mix
- 1 teaspoon fresh ground pepper
- fresh parsley for garnish optional
Preheat oven to 425°.
Scrub potatoes and cut into bite sized chunks and place on a baking sheet.
In a small bowl, whisk together vegetable oil, Ranch dressing mix and fresh ground pepper.
Pour mixture over potatoes and toss to coat potatoes well.
Bake for 15 minutes.
Remove from oven and use a spatula to flip the potatoes over.
Continue to cook 10-15 minutes or until potatoes are crispy.
Garnish with fresh parsley if desired.
Serve immediately.
