Cucumber Tomato Salad

Ingredients

  • 1 cup diced cucumber seeds removed
  • 1 cup diced tomatoes seeds and juice removed
  • 1/2 cup diced onion
  • 1 large garlic clove minced
  • 1/3 cup white vinegar
  • 1/3 cup sugar
  • 1/2 teaspoon salt
  • 1/4 teaspoon pepper

Instructions

  • Stir cucumbers, tomatoes and onion together in a bowl.
  • In a separate bowl, whisk together vinegar, sugar, salt and pepper.
  • Pour over vegetables and mix well.
  • Cover and refrigerate 2 hours before serving.

Notes

Store in an airtight container in refrigerator up to 4 days.
