Ingredients
1cupdiced cucumberseeds removed
1cupdiced tomatoesseeds and juice removed
1/2cupdiced onion
1large garlic cloveminced
1/3cupwhite vinegar
1/3cupsugar
1/2teaspoonsalt
1/4teaspoonpepper
Instructions
Stir cucumbers, tomatoes and onion together in a bowl.
In a separate bowl, whisk together vinegar, sugar, salt and pepper.
Pour over vegetables and mix well.
Cover and refrigerate 2 hours before serving.
