- 2 tablespoons bacon grease or olive oil
- 1 large onion diced
- 1 cup diced sweet peppers
- 1 pound andouille sausage
- 3 cups cooked rice
- 15 oz can tomato sauce
- 1/3 cup blackened seasoning
- 1 teaspoon kosher salt
- 1 1/2 cups chicken broth
- fresh parsley for garnish optional
Add bacon grease or olive oil to a deep skillet and stir in onions and peppers, cook about 5 minutes over medium heat.
Stir in sliced andouille sausage and continue to cook about 5 minutes. Stir often.
Stir in cooked rice, tomato sauce, blackened seasoning, salt and chicken broth.
Cook, stirring frequently about 10 minutes, until heated through.
Garnish with parsley.
