Coconut Pound Cake

- 1/2 cup butter softened
- 1/2 cup shortening
- 3 eggs
- 1 1/2 cups brown sugar
- 2 teaspoons vanilla extract
- 1 3/4 cup all purpose flour
- 1 teaspoon baking soda
- 1/4 teaspoon salt
- 1 cup shredded sweetened coconut flakes
- non stick cooking spray
for icing:
- 1 1/2 cup powdered sugar
- 1/4 cup milk
- 1 cup toasted coconut
Preheat oven to 325° with a rack on the bottom.
In a mixer bowl, add softened butter, shortening and brown sugar. Mix until combined.
Add eggs, one at a time, mixing until combined.
Mix in vanilla extract.
Add flour, baking soda and kosher salt.
Spray a loaf pan with non stick cooking spray.
Pour batter into loaf pan and bake on the bottom rack for 1 hour or until a toothpick inserted comes out clean.
Remove to a wire rack to cool for 10 minutes.
Place cake on a serving tray.
Mix powdered sugar with milk and pour over cake and down the sides.
Top with toasted coconut.
Slice and serve.
