Mushroom and Swiss Roast Beef Sandwich

A Mushroom and Swiss Roast Beef Sandwich is a quick and easy dinner for any night of the week. Thin sliced roast beef piled high with sautéed mushrooms and Swiss cheese is drizzled with homemade white bbq sauce on a brioche bun.

  • Slice mushrooms thin. Place in a skillet with 2 tablespoons butter. Season with salt and pepper. Cook over medium heat until mushrooms start to brown. Set aside.
  • Butter buns and toast lightly under the broiler.
  • Top toasted buns with roast beef, mushrooms and a slice of Swiss cheese.
  • Return to broiler until cheese is melted.
  • Drizzle with white barbecue sauce and add top buns.
  • Serve immediately.
