Beef Stew

Ingredients

  • 3 tablespoons olive oil
  • 1 1/2 pounds beef stew meat
  • 2 tablespoons all purpose flour
  • 1 teaspoon kosher salt
  • 1 teaspoon black pepper
  • 1 onion diced
  • 1 cup thinly sliced carrots
  • 2 celery stalks thinly sliced
  • 4 cups beef broth
  • 1 1/2 pounds potatoes peeled and diced
  • 1 bay leaf

Instructions

  • Place a dutch oven or large soup pan over medium heat and add olive oil.
  • Add stew meat to a bowl and toss with flour, salt and pepper.
  • Pour floured stew meat to pan. Brown meat on all sides, stirring occasionally. Remove to a bowl and set aside. 
  • Stir in carrots, onions and celery to the pan, adding additional olive oil if needed. Stir often, cooking about 8 -10 minutes until vegetables are softened.
  • Whisk in beef broth and add in browned stew meat and potatoes.
  • Add a bay leaf to stew, cover and cook 10 minutes on medium heat.
  • Lower to simmer and cook for 1 1/2 hours, stirring occasionally. 
  • Add salt and pepper to taste. Remove bay leaf and serve immediately.
