- 3 tablespoons olive oil
- 1 1/2 pounds beef stew meat
- 2 tablespoons all purpose flour
- 1 teaspoon kosher salt
- 1 teaspoon black pepper
- 1 onion diced
- 1 cup thinly sliced carrots
- 2 celery stalks thinly sliced
- 4 cups beef broth
- 1 1/2 pounds potatoes peeled and diced
- 1 bay leaf
Place a dutch oven or large soup pan over medium heat and add olive oil.
Add stew meat to a bowl and toss with flour, salt and pepper.
Pour floured stew meat to pan. Brown meat on all sides, stirring occasionally. Remove to a bowl and set aside.
Stir in carrots, onions and celery to the pan, adding additional olive oil if needed. Stir often, cooking about 8 -10 minutes until vegetables are softened.
Whisk in beef broth and add in browned stew meat and potatoes.
Add a bay leaf to stew, cover and cook 10 minutes on medium heat.
Lower to simmer and cook for 1 1/2 hours, stirring occasionally.
Add salt and pepper to taste. Remove bay leaf and serve immediately.
