Ingredients

  • 1 1/2 pounds lean ground beef or ground chuck
  • 1 teaspoon kosher salt
  • 1 teaspoon black pepper
  • 1 large onion diced
  • 4 garlic cloves minced
  • 1 cup chopped bell peppers
  • 2 cups tomato sauce - roasted if available
  • 32 ounces beef broth
  • 2 teaspoons dried oregano
  • 2 cups cooked white or brown rice
  • fresh parsley for garnish if desired.

Instructions

  • Add ground beef to a deep skillet or dutch oven and place over medium- high heat.
  • Cook stirring often to break into small pieces until well browned.
  • Add onion, garlic and bell peppers. Cook 5 minutes or until vegetables start to soften.
  • Add tomato sauce, beef broth and oregano.
  • Bring mixture to a boil and then lower to simmer.
  • Cook 10 minutes.
  • Stir in cooked rice and cook 5 more minutes.
  • Garnish with fresh parsley if desired.
  • Serve immediately.
