- 1 1/2 pounds lean ground beef or ground chuck
- 1 teaspoon kosher salt
- 1 teaspoon black pepper
- 1 large onion diced
- 4 garlic cloves minced
- 1 cup chopped bell peppers
- 2 cups tomato sauce - roasted if available
- 32 ounces beef broth
- 2 teaspoons dried oregano
- 2 cups cooked white or brown rice
- fresh parsley for garnish if desired.
Add ground beef to a deep skillet or dutch oven and place over medium- high heat.
Cook stirring often to break into small pieces until well browned.
Add onion, garlic and bell peppers. Cook 5 minutes or until vegetables start to soften.
Add tomato sauce, beef broth and oregano.
Bring mixture to a boil and then lower to simmer.
Cook 10 minutes.
Stir in cooked rice and cook 5 more minutes.
Garnish with fresh parsley if desired.
Serve immediately.
