- 12 oz wide egg-free noodles
- 2 tablespoons unsalted butter
- 1 medium sweet onion finely chopped
- 3 cloves garlic finely minced
- 1 pound lean ground beef
- 2 tablespoons flour
- 2 teaspoons coarse salt
- 3/4 teaspoons dried Italian herbs
- 1 can 6oz tomato paste
- 1 can 10 oz condensed beef consommé
- 1 tablespoon white wine vinegar
- 8 oz sliced button or crimini mushrooms
- 1 cup sour cream
Bring a large pot of water to boil. Cook noodles according to package directions, al dente.
In a large nonstick skillet, heat the butter over medium-high.
Add onion and garlic. Sauté until softened, about 3 minutes.
Add ground beef and brown, breaking it up with a wooden spoon until no pink remains, 3-4 minutes. Drain off fat.
Mix in the flour, salt and herbs. Stir in tomato paste, consommé, vinegar, and mushrooms.
Turn down heat to medium and simmer, uncovered, stirring occasionally for 10 minutes or until mushrooms are tender.
Remove from heat and store in the sour cream until combined and heated though.
Serve sauce on top of the cooked noodles.
