- 1 5 to 6 pound pork loin
- 2 tablespoons bacon fat or olive oil
- 2 teaspoons Kosher salt
- 1 teaspoon fresh ground pepper
- 1 teaspoon granulated garlic
Preheat oven to 350 degrees F.
Pat loin roast dry with paper towels.
Place in roasting pan and rub all over with bacon fat or olive oil.
Sprinkle with salt, pepper and garlic.
Bake for 2 hours or until a meat thermometer inserted into the center reaches 145°.
Allow pork to rest 10 minutes before slicing.
