Frozen Pineapple Pie

Ingredients

  • 1 10 inch graham cracker crust
  • 8 oz softened cream cheese
  • 14 oz can sweetened condensed milk
  • 1 cup crushed pineapple with juice
  • 4 ounces Cool Whip or sweetened whipped cream optional for garnish
  • remaining crushed pineapple drained or fresh pineapple for optional garnish
  • fresh mint leaves optional for garnish

Instructions

  • Add softened cream cheese to a mixer bowl and beat at medium speed until smooth.
  • Add sweetened condensed milk and continue beating at medium speed, about 2 minutes.
  • Fold in 1 cup of crushed pineapple with the juice.
  • Pour into graham cracker pie crust.
  • Cover and freeze for 4 to 6 hours or until frozen solid..
  • Remove pie from freezer and garnish with Cool Whip, reserved drained pineapple or fresh diced pineapple and mint leaves.
  • Let the pie stand at room temperature for about 10 minutes before slicing.
  • Return covered pie to the freezer immediately.

Notes

Store Frozen Pineapple Pie in a covered dish in the freezer up to 3 days.
For longer storage, wrap tightly in 2 layers of plastic wrap and place in a freezer bag or add a layer of aluminum foil. Store in the freezer up to 6 weeks.
