For the Brownie Layer:
- 1/2 cup vegetable oil
- 1 cup sugar
- 1 teaspoon vanilla extract
- 2 large eggs
- 1/2 cup all purpose flour
- 1/3 cup cocoa powder
- 1/4 teaspoon kosher salt
For the pudding layer
- 1 3.9 oz box instant chocolate pudding
- 2 cups milk
For garnish
- 1 cup heavy cream
- 1/3 cup powdered sugar
- 1/2 cup milk chocolate chips
Preheat oven to 350 degrees.
Add oil, sugar, eggs and vanilla in a mixing bowl and stir until well combined. Add flour, cocoa powder and salt, mixing until well combined.
Spray a pie plate with non stick cooking spray and add brownie batter.
Bake for 20 minutes.
Remove from oven and place on a wire rack until completely cool.
Prepare pudding layer.
Add pudding mix to a mixing bowl and add 2 cups of milk, whisking until smooth.
Pour over baked and cooled brownies.
Add whipping cream and powdered sugar to a mixing bowl and whip until stiff peaks form. Spoon over pudding layer. Add milk chocolate chip to the top and refrigerate 1 hour or until ready to serve.
