    Easy Brownies

    I love brownies because they are chocolate, I always have the ingredients, they are quick and easy and do not make much of mess and did I mention they are super chocolaty!  These are made in a jiffy and often satisfy my chocolate cravings and hopefully it will satisfy yours as well.  My photo above has ice cream and chocolate sauce, apparently this time the brownies just weren't quite enough chocolate.  If a little chocolate is good a lot of chocolate is better, right?

    Easy Brownies

    Ingredients:

    ½ cup vegetable oil

    1 cup sugar

    1 teaspoon vanilla extract

    1 tablespoon strong brewed coffee  (if you aren't a coffee drinker, this can be omitted)

    2 eggs

    ½ cup all purpose flour

    ⅓ cup cocoa powder

    ¼ teaspoon salt

    ¼ teaspoon baking powder

    ⅓ cup semi-sweet chocolate chips

    Cooking Directions:

    Blend oil, sugar, vanilla and coffee in a mixing bowl.  Add eggs and beat well.  Combine flour, cocoa, baking powder, and salt and stir into wet ingredients.  Stir in chocolate chips.  Spread into a 8 to 9 inch square or round pan.  Bake at 350 degrees for 20 minutes.
