I’ve been meaning to share these with you for a while and I have a long list of reasons why I am slow at getting around to it.  It is summer and my side business has really taken off.  I find myself lacking the motivation to get the recipes posts together.

Another fact is that it has been too hot to cook.  I cooked a turkey breast in the crock pot a few days ago and we’ve been eating turkey sandwiches.  Not fancy turkey sandwiches mind you, just regular.  Not too exciting.  I love baking up pies and cakes and especially cookies, but when it’s 105 degrees I just can’t bear to turn on the oven.

I bought blackberries in hopes of making a cobbler.  Instead I made popsicles.  I made Berry Yogurt Pops with fresh berries, yogurt and a little squeeze of lime juice.  No extra sugar and no fat, still yet they were cool, refreshing and delicious.  Have I mentioned that Braum’s is 5 minutes from my house?   Holy ice cream, man.  I need a skinny distraction every now and again.

Emmet didn’t love these as much as I did because of the blackberry seeds.  You could use blueberries and avoid the seeds, if you like.  I kind of like the crunch from the seeds.

 

I have hopes of getting all organized and efficient but that remains to be seen.  I have some super awesome stuff planned for this month so be sure to check in.  I promise it will be worth your while!

Berry Yogurt Pops

Ingredients

  • 1 cup blackberries
  • 1 cup sliced strawberries
  • 1 cup no-fat Greek vanilla yogurt
  • juice of 1/2 lime

Instructions

  • Place all ingredients into a blender and blend until smooth. Pour into popsicle molds and freeze at least 4 hours.

Notes

*Also makes a pretty good smoothie if you can't wait for the freezing time.
