My husband and all of my boys are huge salsa fans.  They love it when my sister-in-law makes salsa, they love the big jars I buy at Sam’s, but they never liked my salsa.  Imagine my dismay.  Then I found this wonderful recipe and it all changed.

I wanted to branch out a bit and come up with my own recipe.  My Mom grows beautiful, red, juicy tomatoes and she roasts them for tomato soup.  I got to thinking roasted tomato salsa would be good too.  Especially if you are lucky enough to have fresh, tasty tomatoes.

About the time I was dreaming up this wonderful salsa, my food processor broke.  I was a little distraught because I use my food processor for so many things. Fortunately the UPS man showed up with this beauty!

So I roasted some peppers and tomatoes.  Just ignore that petrified garlic…

With some fresh cilantro and fresh garlic (see note about petrified garlic above) and a few pulses with the new KitchenAid Food Processor (wonder machine), I had a thick and delicious salsa that the guys all loved.  The roasted tomatoes are sweet and the peppers take on a nice smoky flavor that really sets this salsa apart.

See that huge 13-cup bowl! It also comes with a 4 cup bowl & multiple blades including a dough blade.  Which has already proven handy for biscuits and pie dough!  This processor also has ExactSlice system, allowing you to adjust the thickness of your slices.  Handy I tell ya!  It also has a large feed mouth tube so you don’t have to cut everything into tiny pieces before you process them.  I love it!  Plus it is this gorgeous Empire Red to match my mixer!

We ate this roasted salsa on grilled chicken tacos, then on quesadillas and with some blue corn tortilla chips.  It is my new favorite salsa!  I know you will love it and since July 4th is just a few days away you have the perfect excuse to try it!

Roasted Salsa

Ingredients:

  • 6 Roma tomatoes (or any fresh ripe tomatoes), sliced in half
  • 1 jalapeno, cut in half, seeded and ribs removed
  • 1 poblano pepper, cut into quarters, seeded and ribs removed
  • 2 small sweet pepper, cut in half, seeded and ribs removed
  • 1/4 cup olive oil
  • 1 teaspoon sea salt
  • 1 teaspoon sugar
  • 2 garlic cloves
  • 1/2 bunch fresh cilantro

Cooking Directions:

Preheat oven to 350°F.

Line a baking sheet with aluminum foil.  Layer tomatoes and peppers over foil.  Drizzle olive oil over tomatoes and peppers.  Sprinkle tomatoes with salt and sugar.

Bake for 35 minutes.  Remove from oven and allow to cool to room temperature.

Add roasted tomatoes and peppers to the food processor bowl, add garlic cloves and fresh cilantro.  Pulse 10-15 times, stop and scrape sides with a rubber spatula. Process on low speed for 20-30 seconds or until tomatoes and vegetables are finely chopped and well combined.

Place into a airtight container and chill for 1 hour or until ready to serve.

Roasting tomatoes and peppers brings out so much flavor – I’ll bet this salsa is amazing!

I love making my own homemade salsa. It’s so fresh and tastes a hundred times better than store bought. I bet yours is just delicious with the lovely roasted tomatoes and chilies.

We are so on the same page, I have been *dreaming* of a roasted salsa lately too! I make very simple salsa almost weekly but I was craving something different. This looks absolutely delicious!

I wish my kids ate salsa. Drives me nuts that they don’t!

I’m normally way too lazy to roast my salsa ingredients, it’s faster to make it fresh. However, looking at these gorgeous roasted ingredients is making me change my mind. Roasted veggies taste so wonderful!! I might have to do it this way next time.

This salsa rocks! I love the roasted tomatoes, peppers and the poor, poor, garlic cloves! We just posted some salsas on SaucyCooks last weekend and our FB friends loved them. I’ll definitely share this with them! Happy 4th!
