- 1 cup butter unsalted or salted
- ½ cup granulated sugar plus more for sprinkling
- 1 egg
- 2 teaspoons vanilla bean paste or vanilla extract
- 2 cups all purpose flour
- ¼ teaspoon fine sea salt
Preheat oven to 350° AND line baking sheets with silicone baking mats.
Cream butter and sugar together until light and fluffy. Add the egg and vanilla, mixing until fully combined.
Slowly add in flour and salt until a smooth dough forms.
Fit a cookie press with your desired disc and fill with dough. Press cookies directly onto the baking sheet, leaving a little space between each cookie.
Sprinkle with sugar if desired.
Bake just until the cookies are set and lightly browned on the bottoms, about 9-10 minutes. Remove from the oven and allow to cool briefly on the pan before transferring to a wire rack to cool completely.
- To make without a cookie press, mix 1 tablespoon of milk into the dough when adding the egg. Place in a piping bag using a large star tip.
- Store cookies in an airtight container up to 5 days.
