Spritz Cookies

Ingredients

  • 1 cup butter unsalted or salted
  • ½ cup granulated sugar plus more for sprinkling
  • 1 egg
  • 2 teaspoons vanilla bean paste or vanilla extract
  • 2 cups all purpose flour
  • ¼ teaspoon fine sea salt

Instructions

  • Preheat oven to 350° AND line baking sheets with silicone baking mats.
  • Cream butter and sugar together until light and fluffy. Add the egg and vanilla, mixing until fully combined.
  • Slowly add in flour and salt until a smooth dough forms.
  • Fit a cookie press with your desired disc and fill with dough. Press cookies directly onto the baking sheet, leaving a little space between each cookie.
  • Sprinkle with sugar if desired.
  • Bake just until the cookies are set and lightly browned on the bottoms, about 9-10 minutes. Remove from the oven and allow to cool briefly on the pan before transferring to a wire rack to cool completely.

Notes

  • To make without a cookie press, mix 1 tablespoon of milk into the dough when adding the egg. Place in a piping bag using a large star tip.
  • Store cookies in an airtight container up to 5 days.

Variations and Decorating Ideas

    • Add food coloring to the dough for festive holiday colors.
    • Sprinkle with colored sugar or nonpareils before baking.
    • Dip cooled cookies halfway in melted chocolate and top with sprinkles.
