Slow Cooker Cheesy Ham and Potato Casserole

Ingredients

  • 2 pounds russet potatoes washed, peeled and sliced thin
  • 1 pound ham cut into bite- size chunks
  • ¼ cup butter
  • 1 onion diced
  • 4 cloves garlic minced
  • ¼ cup all purpose flour
  • 1 teaspoon kosher salt
  • ½ teaspoon fresh ground pepper
  • 4 oz cream cheese
  • 1 ½ cups milk
  • 1 cup chicken broth
  • 8 oz shredded Jarlsberg or Swiss cheese divided use
  • Fresh herbs like thyme rosemary or parsley for garnish, optional

Instructions

  • Add butter to a skillet and place over medium heat, add onions and garlic. Cook, stirring often about 4 minutes.
  • Add flour, salt and pepper, whisking to combine. Cook 2 minutes. Add cream cheese, milk and chicken broth. Continue to whisk until cream cheese is melted and sauce becomes thick and starts to bubble.
  • Remove from heat. Stir in half of shredded cheese.
  • Pour sauce into crock pot, add ham and potatoes. Stir until well combined.
  • Cover and cook on high for 3-4 hours or low for 5-6 hours. You can test the tenderness of the potatoes with a fork. Casserole will cook quicker if your potatoes are thin.
  • Add remaining cheese and cover for 20-30 minutes or until cheese has melted and sauce has thickened.
  • Serve immediately or keep warm until serving. Garnish with fresh herbs if desired.
