- 2 pounds russet potatoes washed, peeled and sliced thin
- 1 pound ham cut into bite- size chunks
- ¼ cup butter
- 1 onion diced
- 4 cloves garlic minced
- ¼ cup all purpose flour
- 1 teaspoon kosher salt
- ½ teaspoon fresh ground pepper
- 4 oz cream cheese
- 1 ½ cups milk
- 1 cup chicken broth
- 8 oz shredded Jarlsberg or Swiss cheese divided use
- Fresh herbs like thyme rosemary or parsley for garnish, optional
Add butter to a skillet and place over medium heat, add onions and garlic. Cook, stirring often about 4 minutes.
Add flour, salt and pepper, whisking to combine. Cook 2 minutes. Add cream cheese, milk and chicken broth. Continue to whisk until cream cheese is melted and sauce becomes thick and starts to bubble.
Remove from heat. Stir in half of shredded cheese.
Pour sauce into crock pot, add ham and potatoes. Stir until well combined.
Cover and cook on high for 3-4 hours or low for 5-6 hours. You can test the tenderness of the potatoes with a fork. Casserole will cook quicker if your potatoes are thin.
Add remaining cheese and cover for 20-30 minutes or until cheese has melted and sauce has thickened.
Serve immediately or keep warm until serving. Garnish with fresh herbs if desired.
