Add milk, melted butter, eggs and 1 teaspoon vanilla to the dry ingredients. Stir until combined.
Fold in apples. Set aside.
Add vegetable oil to a heavy bottom pan and place over medium-high heat. Use a deep fry thermometer and heat to 350°.
While the oil heats, Line a baking sheet with paper towels and top with a wire rack, set aside.
Make the glaze by adding 2 cups powdered sugar, 1/4 cup milk and 2 teaspoons of vanilla to a bowl and whisking until smooth. Set aside.
When the oil is hot, carefully drop batter into the pan, adjust the temperature to keep the oil between 350 and 375°.
Flip the fritters to brown on both sides, about 1- 2 minutes per side. Remove from oil when they are golden brown and place on the wire rack.
Cool slightly and then dip into glaze, flipping to coat both sides. Return to the wire rack.
Repeat with remaining batter.
Serve warm or at room temperature.
