Strawberry Napoleons

Easy Strawberry Napoleons are a delicious dessert that everyone will love. Flaky puff pastry layered with the easiest pastry cream and fresh strawberries.

Ingredients

  • 2 sheets frozen puff pastry thawed
  • 2 tablespoons all purpose flour
  • 2 cups heavy whipping cream
  • 8 ounces mascarpone or cream cheese
  • 3/4 cup powdered sugar + more for dusting
  • 1 teaspoon vanilla extract
  • 1 pound strawberries sliced

Instructions

  • Preheat oven to 400°.
  • Remove one sheet puff pastry from packaging and place on a lightly floured surface. Cut with a pizza wheel or sharp knife into 6 rectangles. Place on a parchment lined baking sheet.
  • Bake for 18-20 minutes or until golden brown.
  • Cool on the pan and repeat with the other sheet of puff pastry.
  • Meanwhile, make the pastry cream. Add heavy whipping cream to a large bowl and beat at medium speed with an electric mixer until it starts to thicken, raise to high speed, beating until stiff peaks form.
  • Add mascarpone cheese or cream cheese, vanilla extract and powdered sugar to the bowl.
  • Beat at medium speed until well combined. Cover and refrigerate until ready to assemble the pastries.
  • When puff pastry has cooled, cut each pastry in half with a serrated knife.
  • Spoon pastry cream onto the bottom half of each pastry and top with sliced strawberries.
  • Place the tops of the puff pastry over the strawberries.
  • Sprinkle powdered sugar over the tops with a mesh strainer if desired.
  • Serve immediately or refrigerate, loosely covered with plastic wrap until ready to serve.

Notes

Sweetened Strawberries: Add 1/3 - 1/2 cup sugar to sliced strawberries if you want sweetened strawberries.
Storage: Store napoleons in an airtight container or covered with plastic wrap in the refrigerator up to 2 days. Best if eaten the first day.
Filling Variations: Use any fruit that you like to layer over the pastry cream. Blueberries, blackberries and kiwi are great options.
Topping: Drizzle melted chocolate over the top of each pastry if desired.
Recipe can be halved or doubled as needed.
