Hamburger Vegetable Soup

Ingredients

  • 1 pound lean ground beef 90/10 or 80/20
  • 8 cups beef broth
  • 3 medium potatoes peeled and diced
  • 1 medium onion diced
  • 4 small carrots peeled and sliced
  • 3 celery stalks sliced
  • 4 cloves garlic minced
  • 1/4 cup Worcestershire Sauce
  • 2 teaspoons granulated garlic
  • 2 teaspoons dried thyme
  • 2 teaspoons onion flakes
  • 2 teaspoons smoked paprika
  • 1 teaspoon onion powder
  • 1 teaspoon kosher salt
  • 1 teaspoon pepper

Instructions

  • Brown ground beef in a skillet over medium-high heat, breaking it up to brown on all sides. If using 80/20, drain excess grease and discard.
  • Bring the beef broth to a boil in a soup pot or large dutch oven.
  • Add potatoes, carrots, onion, celery and garlic to boiling broth.
  • Stir in the ground beef.
  • Add with Worcestershire sauce, garlic, thyme, onion flakes, smoked paprika, onion powder, salt and pepper.
  • Cook at a low boil for 15 minutes or until vegetables are fork tender. Lower to simmer until ready to serve.

Notes

  • Store leftover soup in an airtight container in the refrigerator up to 4 days. To freeze, use a freezer-safe container, label with the date and freeze up to 3 months.
  • Reheat soup in a pan over low heat, stirring occasionally until heated through.
  • Variations
  • Tomato sauce or diced tomatoes with Italian seasoning will add delicious flavor.
  • Substitute ground turkey or ground chicken for the ground beef if desired.
  • Use any vegetables that you have on hand: green beans, corn, bell peppers, sweet potatoes or mixed frozen vegetables work well.
  • Pasta is a great addition to hamburger soup, use small shell pasta or any type of pasta right that you have on hand. You can even stir in cooked pasta right before serving.
  • Crock Pot Instructions
    Mix all of the ingredients into a crock pot and cook on low for 6- 8 hours or on high for 3-4 hours.
