- 3 tablespoons butter
- 1 teaspoon kosher salt
- 1 teaspoon fresh ground pepper
- 2 green onions thinly sliced (green and white parts)
Prepare a grill fire to 350°.
Shuck the corn if in the husk, removing the husks and silks.
Using a large piece of heavy duty aluminum foil, place the corn in the center in a single layer.
Thinly slice the butter, placing over the corn.
Season with salt and pepper and top with green onions.
Wrap the foil around the corn, forming a sealed packet.
Cook corn over indirect fire for about 30 minutes.
Remove from grill and carefully open the foil, watching for steam.
Serve immediately.
Storage: Store leftover corn wrapped in plastic wrap or a zip top bag in the refrigerator up to 4 days.
To Reheat: cut corn off of the cob by standing on end, on a cutting board and using a sharp knife to cut from the top to the bottom. Place in a skillet with additional butter over medium heat, stirring often until heated through.
Variations: Add ½ teaspoon granulated garlic and onion powder for additional flavor.
