- 4 thick cut pork chops
- 2 tablespoons olive oil
- 1 1/2 tablespoons brown sugar
- 2 1/2 teaspoons granulated garlic
- 2 1/2 teaspoons coarse black pepper
- 1 1/2 teaspoons kosher salt
- 1/2 teaspoon chili powder
- 1/2 teaspoon smoked paprika
- 1/2 teaspoon dried thyme
Prepare a grill fire to 350°, use hardwood like pecan, oak or hickory for smoke flavor.
Pat pork chops dry with paper towels and place on a rimmed baking sheet.
Brush olive oil over both sides.
In a small bowl, combine brown sugar, garlic, pepper, salt, chili powder, smoked paprika and thyme, mixing with a fork.
Sprinkle brown sugar rub over all sides of pork chops, about 1 tablespoon over each pork chop.
Place onto hot grill and cook with the lid closed for 5 minutes. Flip the pork chops and continue to cook until internal temperature reaches 145° using a digital meat thermometer.
Remove from grill and rest for 5 minutes before slicing.
Stovetop Method: Heat a grill pan or heavy skillet, coat with olive oil. Add the pork chops and cook 5 minutes, turn and continue to cook until internal temperature reaches 145° with a digital thermometer.
Oven Method: Bake pork chops on a rimmed baking sheet at 375° for 12- 15 minutes or until pork chops reach 145°.
Storage: Store leftover pork chops in an airtight container or zip top bag in the refrigerator up to 4 days.
Reheat: Slice pork chops and cook in a skillet coated in olive oil over medium heat, stirring until heated through.
