  • Heat chicken broth in a dutch oven or large pan over medium- high heat for about 10 minutes.
  • Stir in the chicken and chickpeas. Continue to cook another 10- 15 minutes.
  • Garnish with chives if desired and serve immediately.

Notes

Store leftover soup in an airtight container in the refrigerator up to 4 days. Freeze up to 3 months. Reheat in a pan over medium heat, stirring often until heated through.
Additional Options:
  • Sautéed Vegetables: Carrots, celery, onions, bell peppers or mushrooms.
  • Pasta: Broken fettuccine, macaroni, orzo or diatlini.
  • Greens: Baby spinach, kale or chard.
  • Beans: If you don't like chickpeas, navy beans or cannellini beans work well.
  • Herbs: Fresh or dried herbs will add delicious flavor. Thyme, basil and parsley are great additions.
