Bacon Wrapped Sweet Potatoes

- 1 medium sweet potato
- 6 slices bacon thin sliced
- 2 tablespoons brown sugar
- 1/2 teaspoon smoked paprika
- 1/4 teaspoon kosher salt
Preheat oven to 375° and line a baking sheet with parchment paper.
Slice sweet potatoes into 1/4 inch slices using a mandoline slicer.
Use a 2 inch cookie cutter to the center of each slice into circles.
Stack 4 slices together.
Wrap a slice of bacon around each sweet potato stack, tucking the end under the bottom of the stack. Place on the lined baking sheet.
Bake for 30 minutes.
Remove from oven.
Mix the brown sugar with smoked paprika and salt.
Sprinkle over the top of the sweet potato stacks.
Return to the oven for another 15 - 20 minutes or until the sweet potatoes are tender and bacon is crispy.
Remove from oven and cool on the baking sheet for a couple of minutes. Move to a serving platter.
Double recipe as needed.
Storage: Store in an airtight container in the refrigerator up to 3 days.
Reheat: Reheat on a baking sheet in a 350° oven for 5- 10 minutes until heated through.
