Bacon Wrapped Sweet Potatoes

Bacon Wrapped Sweet Potatoes are a super simple side dish for weeknight dinners and delicious enough for holiday meals and special occasions.

Ingredients

  • 1 medium sweet potato
  • 6 slices bacon thin sliced
  • 2 tablespoons brown sugar
  • 1/2 teaspoon smoked paprika
  • 1/4 teaspoon kosher salt

Instructions

  • Preheat oven to 375° and line a baking sheet with parchment paper.
  • Slice sweet potatoes into 1/4 inch slices using a mandoline slicer.
  • Use a 2 inch cookie cutter to the center of each slice into circles.
  • Stack 4 slices together.
  • Wrap a slice of bacon around each sweet potato stack, tucking the end under the bottom of the stack. Place on the lined baking sheet.
  • Bake for 30 minutes.
  • Remove from oven.
  • Mix the brown sugar with smoked paprika and salt.
  • Sprinkle over the top of the sweet potato stacks.
  • Return to the oven for another 15 - 20 minutes or until the sweet potatoes are tender and bacon is crispy.
  • Remove from oven and cool on the baking sheet for a couple of minutes. Move to a serving platter.

Notes

Double recipe as needed. 
Storage: Store in an airtight container in the refrigerator up to 3 days. 
Reheat: Reheat on a baking sheet in a 350° oven for 5- 10 minutes until heated through.
