Mongolian Pork

- 1 pound smoked pork butt chopped (or cooked pork)
- 1/2 cup soy sauce
- 1/4 cup water
- 1 tablespoon toasted sesame oil
- 1/2 cup brown sugar
- 4 cloves garlic minced
- 1 tablespoon ground ginger
- 1 tablespoon cornstarch
- 3 cups steamed broccoli
- 2 carrots julienne cut, steamed
- 3 cups cooked rice
- 1 tablespoon sesame seeds optional garnish
- 1/4 cup cilantro optional garnish
In a large skillet, combine the soy sauce, water, toasted sesame oil, brown sugar, garlic, ginger and cornstarch.
Cook over medium-high heat, whisking to combine. Cook until sauce is thickened and bubbly.
Stir in the chopped pork and lower to simmer, cooking 5 minutes, stirring occasionally.
Serve over cooked rice with broccoli and carrots.
Garnish with sesame seeds and cilantro if desired.
Store leftovers in an airtight container in the refrigerator up to 3 days.
Reheat in a skillet with 1 tablespoon of water over medium heat, stirring until heated through.
