- ½ cup salted butter room temperature
- 2 large eggs
- ½ cup peanut butter crunchy or creamy
- 1 cup granulated sugar
- 1 cup brown sugar
- 1 teaspoon vanilla extract
- 2 cups all purpose flour
- 1 cup old fashioned oats
- 1 cup Rice Krispies cereal
- ½ teaspoon kosher salt
- ¼ teaspoon baking powder
- 1 teaspoon baking soda
- 2 cups chocolate chips more for topping the cookies if desired
Pre-heat oven to 375°
In a large bowl, add butter and peanut butter, beat until creamy.
Add in sugars, eggs and vanilla, beating with mixer until combined.
Add flour, oats, Rice Krispies, baking powder, baking soda and salt. Beat until combined.
Add chocolate chips and mix well.
Use a cookie scoop or form into 1 1/2 inch balls and place on a greased or lined baking sheet about 2 inches apart.
Smash cookie balls slightly and bake for 10-12 minutes or until lightly browned.
Top each cookie with a few chocolate chips.
Move to a wire rack to cool completely.
- Storage: Store cooled cookies in an airtight container up to 4 days.
- Variations: Chocolate chips are optional but pair great with the peanut butter flavor. Add in chopped pecans or walnuts for more crunch.
- Baking Time: For chewy cookies bake about 10 minutes, for crunchy cookies bake for another 2-3 minutes until the cookies are golden brown on top.
