Peanut Butter Rice Krispies Cookies

Ingredients

  • ½ cup salted butter room temperature
  • 2 large eggs
  • ½ cup peanut butter crunchy or creamy
  • 1 cup granulated sugar
  • 1 cup brown sugar
  • 1 teaspoon vanilla extract
  • 2 cups all purpose flour
  • 1 cup old fashioned oats
  • 1 cup Rice Krispies cereal
  • ½ teaspoon kosher salt
  • ¼ teaspoon baking powder
  • 1 teaspoon baking soda
  • 2 cups chocolate chips more for topping the cookies if desired

Instructions

  • Pre-heat oven to 375°
  • In a large bowl, add butter and peanut butter, beat until creamy.
  • Add in sugars, eggs and vanilla, beating with mixer until combined.  
  • Add flour, oats, Rice Krispies, baking powder, baking soda and salt. Beat until combined.
  • Add chocolate chips and mix well.
  • Use a cookie scoop or form into 1 1/2 inch balls and place on a greased or lined baking sheet about 2 inches apart.
  • Smash cookie balls slightly and bake for 10-12 minutes or until lightly browned.
  • Top each cookie with a few chocolate chips.
  • Move to a wire rack to cool completely.

Notes

  • Storage: Store cooled cookies in an airtight container up to 4 days.
  • Variations: Chocolate chips are optional but pair great with the peanut butter flavor. Add in chopped pecans or walnuts for more crunch.
  • Baking Time: For chewy cookies bake about 10 minutes, for crunchy cookies bake for another 2-3 minutes until the cookies are golden brown on top.
