- 2 cups granulated sugar
- 2 cups water
- sprig of fresh rosemary optional
Mix sugar and water in a 9 x 13 pan. Add a sprig of rosemary if desired.
Place over indirect fire using pecan or hickory for the smoke.
Close the grill and keep the temperature under 200° for the best results. You don't want to actually boil the water.
Cook for 20- 30 minutes until mixture has reached desired smokiness.
Remove from grill and cool to room temperature. Remove the rosemary sprig.
Pour syrup into a glass jar, cover with an airtight lid and refrigerate up to 3 weeks.
Flavor Variations:
- Add lemon or orange peel for a citrus twist.
- Fresh mint, thyme or basil will also add herbal notes that pair great with cocktails.
- Cinnamon sticks, vanilla beans or coffee beans are also great flavoring ideas.
