For the Sausage, Peppers & Onions: We prepared the sausage, peppers and onions on the grill. It can also be cooked on the stovetop in a skillet.
For Grilling: Leave the sausage whole. Slice the peppers and onions and toss with olive oil. Grill at 350° with the grill closed for about 15- 20 minutes, turning the sausage and vegetables about half way through. Add hickory or pecan for smoke flavor.
Stovetop: Slice sausage and dice vegetables. Coat a large skillet with olive oil and place over medium heat. Cook sausage and vegetables, stirring often until vegetables are softened and start to caramelize, about 10 -15 minutes.
Remove the sausages, peppers and onions from the grill or skillet.
Slice the sausage into bite sized pieces, dice the onions and peppers.
Meanwhile, boil the pasta according to package directions and drain well.
To make the sauce, add cream cheese, milk and heavy cream to a saucepan. Add blackened seasoning and salt, cook over medium heat, whisking until smooth and heated through.
Add parmesan cheese, whisk to combine.
Stir in the drained pasta, sausage, peppers and onions.
Mix well until thoroughly combined.
Remove from heat.
Garnish with parsley if desired and serve immediately.
