- 8 ounces rotini pasta
- 1/2 pint cherry tomatoes
- 6 ounces mozzarella balls
- 1/4 cup thin sliced red onion
- 1/2 cup olive oil
- 1/4 cup white wine vinegar
- 1 tablespoon brown sugar
- 1 teaspoon granulated garlic
- 1/2 teaspoon dried basil
- 1/2 teaspoon dried thyme
- 1/2 teaspoon dried oregano
- 1 teaspoon kosher salt
- 1/2 teaspoon black pepper
- fresh basil for garnish optional
Cook rotini pasta according to package directions. Drain in a colander and rinse with cold water until completely cooled. Drain well and place in a serving bowl.
Slice tomatoes and add to pasta with onion and mozzarella balls.
In a small bowl, whisk together olive oil, white wine vinegar, brown sugar, garlic, basil, thyme, oregano, salt and pepper.
Pour over pasta and stir until well combined.
Cover and refrigerate one hour before serving.
Store pasta in an airtight container in the refrigerator up to 3 days. Stir before serving.
Recipe can be doubled.
