Brisket Spaghetti

Brisket Spaghetti is a fabulous way to enjoy leftover smoked brisket from your weekend cookout.

Ingredients

  • 2/3 cup olive oil divided
  • 1 small onion diced
  • 1 cup diced bell peppers
  • 3 garlic cloves minced
  • 1 pound spaghetti
  • 1/2 pound smoked brisket
  • 1 tablespoon dried basil
  • 1 tablespoon dried oregano
  • 1 tablespoon dried thyme
  • 1 tablespoon butter
  • 1 teaspoon kosher salt
  • 1 teaspoon fresh ground pepper
  • Sliced green onions diced tomatoes, parmesan cheese for garnish, optional

Instructions

  • Cook diced onions, bell peppers and minced garlic in a pan with 1/3 cup of olive oil over medium heat. Stir often, cooking until vegetables are caramelized.
  • Boil spaghetti according to package directions and drain.
  • Add brisket to skillet to onion mixture. Lower to simmer and stir to combine.
  • Place remaining olive oil in pasta pan and place over low heat. Add drained spaghetti and toss to coat.
  • Next, add brisket, basil, oregano, thyme, salt, pepper and butter.
  • Toss with tongs until mixture is well combined.
  • Serve with tomatoes, green onions and parmesan if desired.

Notes

Store cooled spaghetti in a covered dish in the refrigerator up to 4 days.
Reheat in a skillet with a tablespoon of water over medium heat. Stir often until cooked through, about 3- 5 minutes.
