Frito Corn Salad

Frito Corn Salad is a flavorful side dish filled with sweet corn, onions, peppers, cheese and crushed Chili Cheese Fritos. A great recipe for any cookout, celebration or potluck get together.

Ingredients

  • 1 can whole kernel sweet corn 15 ounces
  • 1/2 cup diced green bell pepper
  • 1/2 cup diced red onion
  • 1/2 cup mayonnaise
  • 1 cup shredded cheese sharp cheddar, colby-jack, or pepper jack
  • 5 ounces crushed Chili Cheese Fritos

Instructions

  • Drain corn and add to a medium size bowl.
  • Mix in bell peppers, red onion, mayonnaise and cheese.
  • Cover and refrigerate at least an hour or overnight.
  • Mix in crushed Fritos just before serving.

Notes

  • Feed a Crowd: This easy frito corn salad recipe can be doubled as needed.
  • Makes a Great Dip: Serve this corn salad with Fritos Scoops or tortilla chips.
  • Frozen Corn: If you are using frozen corn, thaw by running under cool water until corn kernels are no longer frozen, drain well.
  • Variations: If you aren't a fan of mayonnaise, substitute half or all of it with sour cream.
  • Add-Ins: Sliced green onions, rinsed and drained black beans, green chiles, or candied jalapeños are great additions to give it a little kick.
  • Storage: Store corn salad in an airtight container or covered in plastic wrap in the refrigerator for up to 3 days. Add crushed Fritos before serving.
