Frozen Corn: If you are using frozen corn, thaw by running under cool water until corn kernels are no longer frozen, drain well.
Variations: If you aren't a fan of mayonnaise, substitute half or all of it with sour cream.
Add-Ins: Sliced green onions, rinsed and drained black beans, green chiles, or candied jalapeños are great additions to give it a little kick.
Storage: Store corn salad in an airtight container or covered in plastic wrap in the refrigerator for up to 3 days. Add crushed Fritos before serving.
