Creamy Lemon Garlic Spaghetti

- 1 pound spaghetti
- 3 tablespoons olive oil
- 1 pound boneless pork or chicken cut into bite sized pieces
- 1 teaspoon kosher salt
- 1 teaspoon pepper
- 1 onion sliced thin
- 4 large garlic cloves minced
- 1/2 cup butter
- zest of 1 lemon
- 2 tablespoons lemon juice
- 2 tablespoons dijon mustard
- 2 tablespoons honey
- 1/2 cup heavy cream
- 1 cup grated Parmesan cheese
- 1/4 teaspoon chili flakes
Cook spaghetti according to package directions.
Add olive oil to a large skillet with pork or chicken. Season with 1/2 teaspoon of salt and pepper. Cook over medium heat, stirring until browned on all sides.
Add onion and garlic, cooking until onions are softened.
Lower heat to simmer and add butter, lemon zest, lemon juice, dijon, honey, cream, parmesan and remaining salt and pepper plus the chili flakes.
Whisk until combined.
Add cooked and drained spaghetti and toss with tongs until spaghetti is completely coated in sauce.
Garnish with parsley if desired and serve immediately.
Store leftover spaghetti in an airtight container in refrigerator for up to 4 days.
Reheat with 1 tablespoons of milk per cup of spaghetti in a skillet over medium heat. Use tongs to toss the spaghetti to heat through.
