Skillet Blackberry Cobbler

Skillet Blackberry Cobbler is a classic dessert to bake for any day of the week. It's made with just a few pantry ingredients and fresh blackberries for a super simple dessert that everyone will enjoy. Top it off with sweetened whipped cream or vanilla ice cream for an extra special treat.

Ingredients

  • 1/2 cup all purpose flour
  • 1/2 cup sugar
  • 1/2 teaspoon baking powder
  • 6 tablespoons milk
  • 1/4 cup melted butter
  • 1 teaspoon vanilla
  • 2 cups blackberries

for topping:

  • 2 tablespoons sugar
  • 1/2 teaspoon ground cinnamon
  • sweetened whipped cream or vanilla ice cream for serving.

Instructions

  • Preheat oven to 350°.
  • Spray a 10 inch skillet or pie plate with non stick cooking spray.
  • In a bowl, whisk together flour, sugar and baking powder.
  • Add milk, melted butter and vanilla and combine until smooth.
  • Pour into prepared skillet and top with blackberries.
  • In a small bowl mix 2 tablespoons of sugar and cinnamon together.
  • Sprinkle over blackberries.
  • Bake cobbler for 20 - 25 minutes or until blackberries are bubbly and cobbler is set.
  • Remove from oven and cool slightly before serving with whipped cream or vanilla ice cream.

Notes

To Make Sweetened Whipped Cream:
Beat 1 cup of heavy whipping cream with an electric mixer at high speed until thickened. Mix in 1/3 cup powdered sugar and beat until stiff peaks form. Refrigerate until ready to serve.
Store leftovers covered in refrigerator up to 3 days. Allow cobbler to come to room temperature before serving.
