- 1/2 cup all purpose flour
- 1/2 cup sugar
- 1/2 teaspoon baking powder
- 6 tablespoons milk
- 1/4 cup melted butter
- 1 teaspoon vanilla
- 2 cups blackberries
for topping:
- 2 tablespoons sugar
- 1/2 teaspoon ground cinnamon
- sweetened whipped cream or vanilla ice cream for serving.
Preheat oven to 350°.
Spray a 10 inch skillet or pie plate with non stick cooking spray.
In a bowl, whisk together flour, sugar and baking powder.
Add milk, melted butter and vanilla and combine until smooth.
Pour into prepared skillet and top with blackberries.
In a small bowl mix 2 tablespoons of sugar and cinnamon together.
Sprinkle over blackberries.
Bake cobbler for 20 - 25 minutes or until blackberries are bubbly and cobbler is set.
Remove from oven and cool slightly before serving with whipped cream or vanilla ice cream.
To Make Sweetened Whipped Cream:
Beat 1 cup of heavy whipping cream with an electric mixer at high speed until thickened. Mix in 1/3 cup powdered sugar and beat until stiff peaks form. Refrigerate until ready to serve.
Store leftovers covered in refrigerator up to 3 days. Allow cobbler to come to room temperature before serving.
