- 1/2 cup softened butter
- 1 cup peanut butter
- 1 cup brown sugar
- 2 large egg
- 2 teaspoons vanilla extract
- 1 1/4 cup all purpose flour
- 1 cup old fashioned oats
- 1 teaspoon baking soda
- 1/3 cup sugar for rolling
Preheat oven to 375°F.
Add butter, peanut butter and brown sugar to bowl and stir to combine.
Next, add eggs and vanilla, mixing until combined.
Add flour, oats and baking soda, mix well.
Pour 1/4 cup sugar to a small bowl.
Use a cookie scoop to form 1 1/4 inch dough balls.
Roll in sugar and place 2 inches apart on a greased or lined baking sheet.
Mash cookies with a fork crosswise.
Bake for 10-12 minutes or just until edges are lightly browned.
Cool cookies on a wire rack.
Store cooled cookies in an airtight container up to 5 days.
