- 6 baking potatoes
- 1 cup butter
- 3/4 cup heavy cream
- 1 cup sour cream
- 12 oz shredded cheddar cheese divided use
- 1 tablespoon granulated garlic
- 1 tablespoon kosher salt
- 1/2 tablespoon black pepper
- 1 teaspoon smoked paprika
- 8 slices bacon cooked and crumbled
- 3 green onions sliced thin
- non stick cooking spray
Preheat oven to 400°.
Scrub potatoes, pierce with a fork and place on a baking sheet. Bake for 1 hour.
Lower oven temperature to 375°.
Cut potatoes in half and scrape insides into a mixing bowl.
Top with melted butter, cream, sour cream, 1 cup shredded cheese and seasonings.
Mix together with an electric mixer until well combined.
Spray a 9 x 9 or 13 x 9 baking dish with non stick cooking spray.
Pour potato mixture into pan. Cover with foil and bake for 30 minutes.
Remove from oven and top with remaining cheese and bacon.
Bake for 15 minutes or until casserole is heated through.
Garnish with green onions if desired.
