Twice Baked Potato Casserole

Ingredients

  • 6 baking potatoes
  • 1 cup butter
  • 3/4 cup heavy cream
  • 1 cup sour cream
  • 12 oz shredded cheddar cheese divided use
  • 1 tablespoon granulated garlic
  • 1 tablespoon kosher salt
  • 1/2 tablespoon black pepper
  • 1 teaspoon smoked paprika
  • 8 slices bacon cooked and crumbled
  • 3 green onions sliced thin
  • non stick cooking spray

Instructions

  • Preheat oven to 400°.
  • Scrub potatoes, pierce with a fork and place on a baking sheet. Bake for 1 hour.
  • Lower oven temperature to 375°.
  • Cut potatoes in half and scrape insides into a mixing bowl.
  • Top with melted butter, cream, sour cream, 1 cup shredded cheese and seasonings.
  • Mix together with an electric mixer until well combined.
  • Spray a 9 x 9 or 13 x 9 baking dish with non stick cooking spray.
  • Pour potato mixture into pan. Cover with foil and bake for 30 minutes.
  • Remove from oven and top with remaining cheese and bacon.
  • Bake for 15 minutes or until casserole is heated through.
  • Garnish with green onions if desired.
