Ingredients

  • 2 tablespoons olive oil
  • 2 cups diced onion
  • 1 cup diced carrots
  • 2 pounds russet potatoes
  • 6 cups chicken broth
  • 1 pound smoked sausage
  • 2 cups milk
  • 2 tablespoons cornstarch
  • 1 tablespoon Mediterranean Seasonings
  • 1 teaspoon granulated garlic
  • 1/2 teaspoon kosher salt

Instructions

  • Add olive oil to a dutch oven or large pan and place over medium heat.
  • Stir in onions and carrots, cook for 10 minutes or until vegetables are softened and onions start to brown.
  • Pour in chicken broth and add potatoes. Bring to a boil and cook until potatoes are tender, about 20 minutes.
  • Add smoked sausage.
  • Whisk milk and cornstarch together and mix into soup.
  • Stir in Mediterranean seasonings, garlic and salt.
  • Whisk until soup has thickened about 5 minutes.
  • Remove from heat and serve immediately.

Notes

Tips for Potato Soup:
  • Use russet or Yukon gold potatoes.
  • Cut potatoes into small chunks and they will cook faster.
  • If you don't have cornstarch to thicken the soup, remove about a cup of the cooked potatoes and mash them. Stir them back into the soup to thicken.
  • If you are adding cheese, add it at the very end of cooking.
