Shrimp Fried Rice or Com Chien Tom is flavored with fish sauce and loaded with carrots, green beans and garlic shrimp. A quick and easy dinner that the entire family will agree on. Skip the take out and try this incredibly delicious version at home!
2cupsleftover cooked cold white rice - jasmine or basamti
2tablespoonsfish sauce
1/2teaspoonground turmeric
2tablespoonscooking oil
6clovesgarlicminced
12large shrimppeeled and deveined
2eggslightly beaten
1/2cupFrench green beanssliced to 3/4- inch pieces
1/2cupjulienned carrotsabout 3/4- inch pieces
1ouncechopped fresh cilantro for garnish
1red chilisliced optional
Instructions
Prepare the rice by sprinkling a little water on it to moisten and then separate the grains by rubbing them between your fingers. Set aside.
Mix fish sauce and turmeric together in a small bowl.
Heat oil over medium heat in a wok or large skillet. Fry the garlic and shrimp, cooking until shrimp is opaque and bright pink. Push shrimp to one side of the wok or move to a bowl and keep warm.
Pour beaten eggs on the other side and allow to set a few seconds, then stir well. Add the green beans and carrots and stir fry for a minute.
Add rice and increase heat to high and cook 3-4 minutes or until the rice is fully heated through.
Add the fish sauce mixture and then mix everything well until the rice is fully coated with the sauce.
If you set shrimp aside, top rice with shrimp and garnish with cilantro and sliced chili if desired.
