- 1/4 cup seeded and diced cucumbers
- 1/4 cup seeded and diced grape tomatoes
- 1/4 cup diced radishes
- 1/4 cup diced Vidalia onion
- 1/2 garlic clove finely chopped
- 1 tablespoon chopped parsley or cilantro
- 1 teaspoon chopped fresh rosemary dill or basil.
- 1/2 cup mayonnaise
- 1/2 teaspoon kosher salt
- 1/2 cup sour cream
- 1/2 teaspoon pepper
Seed and dice cucumbers and tomatoes.
Dice onion, radish, and garlic.
Finely chop fresh herbs.
Add mayonnaise and sour cream to a serving bowl and stir to combine.
Add diced vegetables, garlic, herbs, salt and pepper, stirring to combine.
Cover and refrigerate until ready to serve.
Place in center of a platter and surround with fresh vegetables for serving.
