- 2 pounds potatoes red, russet or Yukon gold
- 1/4 cup olive oil
- 2 large garlic cloves minced
- 2 teaspoons minced fresh rosemary
- 1/2 teaspoon kosher salt
- 1/2 teaspoon fresh ground pepper
Scrub potatoes and peel if desired. Cut larger potatoes into about 1 1/2-2 inch chunks, you can leave smaller baby potatoes whole.
Add potatoes to a large bowl and drizzle with olive oil.
Add rosemary, garlic, salt and pepper and toss with hands until potatoes are throughly coated.
Spread potatoes in air fryer basket in an even layer.
Cook at 350° for 22-25 minutes, or until potatoes are tender. Stir about half way through.
