- 1 pound sweet Italian Sausage
- 4 garlic cloves minced
- 1/2 cup diced sweet red pepper
- 4 cups chicken broth
- 1 16 ounce package refrigerated or frozen cheese tortellini
- 4 oz fresh baby spinach coarsely chopped
- 1 cup heavy cream or whole milk
- 2 tablespoons corn starch
- 1/2 teaspoon red pepper flakes optional
Brown Italian sausage in a Dutch oven or large soup pot.
Add minced garlic and diced red pepper, cook 5 minutes.
Stir in chicken broth and bring to a boil.
Next, add tortellini and cook for 5 minutes.
Add spinach, cook for 5 minutes, stirring often.
Mix cream or milk with corn starch and whisk into soup.
Continue to stir until soup has slightly thickened.
Sprinkle with red pepper flakes if desired.
Add-Ins: Dice a medium onion and sauté with red peppers. Kale can be substituted for spinach if that is what you have on hand.
Protein Variations: Use lean ground beef along with Italian seasoning if you don't have pork sausage on hand. Cooked chicken also makes a wonderful cheese tortellini soup.
Garnish Ideas for Tortellini Soup: Freshly grated Parmesan cheese, fresh basil or fresh parsley.
Storage: Store leftover soup in an airtight container in the refrigerator up to 3 days or freeze up to 3 months.
