Easy Tortellini Soup

Ingredients

  • 1 pound sweet Italian Sausage
  • 4 garlic cloves minced
  • 1/2 cup diced sweet red pepper
  • 4 cups chicken broth
  • 1 16 ounce package refrigerated or frozen cheese tortellini
  • 4 oz fresh baby spinach coarsely chopped
  • 1 cup heavy cream or whole milk
  • 2 tablespoons corn starch
  • 1/2 teaspoon red pepper flakes optional

Instructions

  • Brown Italian sausage in a Dutch oven or large soup pot.
  • Add minced garlic and diced red pepper, cook 5 minutes.
  • Stir in chicken broth and bring to a boil.
  • Next, add tortellini and cook for 5 minutes. 
  • Add spinach, cook for 5 minutes, stirring often. 
  • Mix cream or milk with corn starch and whisk into soup.
  • Continue to stir until soup has slightly thickened. 
  • Sprinkle with red pepper flakes if desired.

Notes

Add-Ins: Dice a medium onion and sauté with red peppers. Kale can be substituted for spinach if that is what you have on hand. 
Protein Variations: Use lean ground beef along with Italian seasoning if you don't have pork sausage on hand. Cooked chicken also makes a wonderful cheese tortellini soup.
Garnish Ideas for Tortellini Soup: Freshly grated Parmesan cheese, fresh basil or fresh parsley. 
Storage: Store leftover soup in an airtight container in the refrigerator up to 3 days or freeze up to 3 months. 
Reheat: Cook soup in a saucepan over medium heat, stirring until heated through.
