Ingredients

  • 2 tablespoons olive oil
  • 1 large onion diced
  • 2 stalks celery diced
  • 1 carrot diced
  • 2 garlic cloves minced
  • 1 teaspoon kosher salt
  • 1/2 teaspoon fresh ground pepper
  • 1 bay leaf
  • 6 cups chicken broth
  • 3 cups whole milk
  • 16 oz Amish noodles or egg noodles
  • 8 ounces of shredded chicken or turkey

Instructions

  • Shred chicken or turkey and set aside. 
  • Add olive oil to a Dutch oven and place over medium heat. 
  • Add diced onion, carrots, celery and minced garlic. 
  • Cook for 5 minutes, stirring often or until softened. 
  • Season with salt and pepper and add bay leaf. 
  • Stir in chicken broth and milk, raise heat to high and bring to a boil.
  • Add Amish or Egg Noodles and chicken or turkey, stir often. 
  • Cook 8-10 minutes or until noodles are tender. 
  • Remove bay leaf.
  • Serve immediately.
