- 2 tablespoons olive oil
- 1 large onion diced
- 2 stalks celery diced
- 1 carrot diced
- 2 garlic cloves minced
- 1 teaspoon kosher salt
- 1/2 teaspoon fresh ground pepper
- 1 bay leaf
- 6 cups chicken broth
- 3 cups whole milk
- 16 oz Amish noodles or egg noodles
- 8 ounces of shredded chicken or turkey
Shred chicken or turkey and set aside.
Add olive oil to a Dutch oven and place over medium heat.
Add diced onion, carrots, celery and minced garlic.
Cook for 5 minutes, stirring often or until softened.
Season with salt and pepper and add bay leaf.
Stir in chicken broth and milk, raise heat to high and bring to a boil.
Add Amish or Egg Noodles and chicken or turkey, stir often.
Cook 8-10 minutes or until noodles are tender.
Remove bay leaf.
Serve immediately.
