Crock Pot Black Eyed Peas

Ingredients

  • 1 pound dried black eyed peas
  • 4 slices thick cut bacon
  • 2 tablespoons olive oil
  • 1 large onion diced
  • 4 cloves garlic minced
  • 1 tablespoon black pepper
  • 1/4 teaspoon red pepper flakes
  • 1 cup diced smoked turkey optional
  • 1 ham bone
  • 4 cups chicken broth
  • 1 1/2 teaspoons kosher salt

Instructions

  • Place black eyed peas into a bowl and cover with cold water. Set aside for 1 hour.
  • Cook bacon in a skillet until crispy, remove to paper towels to drain. Crumble and set aside.
  • Add olive oil, onions and garlic to skillet with bacon dripping and cook on medium-low heat until caramelized.
  • Add smoked turkey and crumbled bacon and cook on low 5 minutes. 
  • Stir red pepper flakes and black pepper. 
  • Add ham bone to crock pot.
  • Add bacon and onion mixture.
  • Drain and sort black eyed peas, removing skins and broken pieces. 
  • Add black eyed peas to crock pot and top with chicken broth. 
  • Stir well and cover with lid. 
  • Cook on high 4 hours or on low 6-8 hours. 
  • Add kosher salt and stir well. 
  • Taste black eyed peas to test tenderness.
  • Serve with buttered cornbread.
