Place black eyed peas into a bowl and cover with cold water. Set aside for 1 hour.
Cook bacon in a skillet until crispy, remove to paper towels to drain. Crumble and set aside.
Add olive oil, onions and garlic to skillet with bacon dripping and cook on medium-low heat until caramelized.
Add smoked turkey and crumbled bacon and cook on low 5 minutes.
Stir red pepper flakes and black pepper.
Add ham bone to crock pot.
Add bacon and onion mixture.
Drain and sort black eyed peas, removing skins and broken pieces.
Add black eyed peas to crock pot and top with chicken broth.
Stir well and cover with lid.
Cook on high 4 hours or on low 6-8 hours.
Add kosher salt and stir well.
Taste black eyed peas to test tenderness.
Serve with buttered cornbread.
