Loaded Potato Skins

Loaded Potato Skins are loaded with smoked roast beef, cheese and wrapped in crispy bacon for the ultimate appetizer!

Ingredients

  • 6 small red potatoes
  • 2 tablespoons olive oil
  • salt and pepper
  • 1/3 cup shredded cheese I used cheddar
  • 1 cup chopped smoked roast beef
  • 2 green onions chopped

Instructions

  • Preheat oven to 375°
  • Wash potatoes and dry. 
  • Cut in half and place on a baking sheet. 
  • Pour olive oil over potatoes and toss to coat. 
  • Turn potatoes cut side down in a single layer. 
  • Bake for 25 minutes or until fork tender. 
  • Remove from oven and cool slightly. 
  • Remove center of each potato with a spoon and set aside for another use. 
  • Sprinkle each potato half with salt and pepper. 
  • Add a bit of shredded cheese to each potato.
  • Top with chopped smoked roast beef. 
  • Wrap each potato with bacon and secure with a toothpick. 
  • Bake for 10 minutes or until cheese is melted and potatoes are heated through.
  • Garnish with chopped green onion and serve with Dr Pepper Barbecue Sauce
