- 2 tablespoons olive oil
- 1 cup diced onion
- 1 cup diced red pepper
- 3 garlic cloves minced
- 1 tablespoon cumin
- 1 tablespoon chili powder
- 1 teaspoon kosher salt
- 4 cups diced smoked chicken or rotisserie chicken
- 2 cups black beans rinsed and drained
- 4 cups chicken broth
- 3/4 cup heavy cream or milk
- 1/4 cup sour cream
- 2 tablespoons corn starch
- 1 cup shredded cheese for serving I used cotija
- Fresh cilantro for garnish
Add olive oil to a dutch oven or large pan, place over medium-high heat.
Add onion, red pepper, and garlic.
Cook until onions softened, about 5-6 minutes.
Stir in seasonings, cook 1 minute.
Add chicken, beans and chicken broth. Cook on medium heat for 10 minutes.
Mix heavy cream, sour cream, and cornstarch together.
Whisk into chili and simmer 30 minutes.
Serve with cheese and fresh cilantro.
