Ingredients

  • 2 tablespoons olive oil
  • 1 cup diced onion
  • 1 cup diced red pepper
  • 3 garlic cloves minced
  • 1 tablespoon cumin
  • 1 tablespoon chili powder
  • 1 teaspoon kosher salt
  • 4 cups diced smoked chicken or rotisserie chicken
  • 2 cups black beans rinsed and drained
  • 4 cups chicken broth
  • 3/4 cup heavy cream or milk
  • 1/4 cup sour cream
  • 2 tablespoons corn starch
  • 1 cup shredded cheese for serving I used cotija
  • Fresh cilantro for garnish

Instructions

  • Add olive oil to a dutch oven or large pan, place over medium-high heat.
  • Add onion, red pepper, and garlic.
  • Cook until onions softened, about 5-6 minutes.
  • Stir in seasonings, cook 1 minute.
  • Add chicken, beans and chicken broth. Cook on medium heat for 10 minutes.
  • Mix heavy cream, sour cream, and cornstarch together.
  • Whisk into chili and simmer 30 minutes.
  • Serve with cheese and fresh cilantro.
