Ingredients
1cupbutter at room temperature
1 1/2cupssugar
1tablespoonMadagascar vanilla extract
4large eggs
1 3/4cupsall- purpose flour
1/4teaspoonsalt
*berries and cool whip for garnish if desired
Instructions
Preheat oven to 325 degrees. Grease a 8 1/2 x 4 1/2 x 2 3/4 inch loaf pan with butter or non stick cooking spray and set aside.
In a large bowl, with a hand (or stand) mixer, cream the butter and sugar until fluffy, about 2 minutes. Scrape down the sides of the bowl with a spatula and then add the vanilla and eggs and beat until combined.
Slowly add the flour and salt and beat until well combined.
Pour the batter into the prepared loaf pan and bake for 50 to 60 minutes , or until a toothpick inserted into the center comes out clean.
Allow to cool in the pan, then remove from the pan, slice and serve.
